I bought this ExcelSteel 35 Qt. Professional Stainless Steel Stock Pot with Encapsulated Base and Lid for my cheese vat. I used it for the first time this past weekend (Sep 29 2018) to make 6 lbs. of Gruyere Cheese (6 gallons of milk). I love the encapsulated bottom that both spread and held the heat. The handles are heavy duty and had no trouble supporting the weight. The lid was nice and fit well. For a pot it’s very heavy. Use caution the first time and really scrub the inside. I think there was a protective coating. I highly recommend the product.
