Despite pre-heating pan before adding oil, heating the oil before adding the the steaks, both the 10 and 12 inch skillets have residual meat debris (carbon) that can’t be cleaned from the surface- even though the steaks turned out great. Skillet surfaces have a very slight ”texture”.

I turned the pan because the sides were not high enough. If I was making sauces etc It looked as if, when stirring, the contents might go over the sides. For cooking eggs etc it might be fine, but not for how I planned to use it
